Banana Pancakes



When I first saw this recipe I really didn't expect to like the finished product but they are lovely! I'm not the biggest fan of banana's in their raw state but after trying the banana bread loaf as featured here, I thought I would try something else that was banana related.


I've seen this recipe on the Interwebz quite a lot lately and didn't really believe that just three ingredients would work but they do! All you need is coconut oil (I used olive oil lightly the first time and it worked fine), 2 eggs and a banana - that's it!

Mash up your banana in a bowl, add the eggs and then fry a little coconut oil in a frying pan until it's melted. Either spoon in or pour the mixture (small or large amounts depending on how big you want your pancakes) and cook on both sides until golden, just as you would with regular pancakes. I served mine with some honey and they were very tasty.

I did try to experiment and switch up the ingredients with varying results. I added around a tablespoon or so of ground almonds to the egg/banana mix and this worked fine. I couldn't taste the almonds but I think it did add a little more 'body' to them. I also added some vanilla extract which worked very well, so would probably try some proper vanilla paste to see if it gave a stronger flavour.

I then thought "why not add some peanut butter?"…this is where it went wrong. I actually tried almond butter which I had left over from the banana bread recipe. I probably used around a tablespoon, mixed in and then added some bi-carb of soda to make them more fluffy. I don't know if it was this or the almond butter but the taste was disgusting. They did puff up which was nice but the flavour was sort of salty/savoury in a very bad way! Definitely not experimenting again unless it's with sweet things!
