The other day I had a real craving for cake but after searching through my cupboards we didn't have a lot of the ingredients I would normally use for a vanilla sponge cake.
After searching through the internet I cobbled together this recipe. It tasted lovely, just like a regular sponge cake but the great thing is I haven't used any dairy, i.e. no egg! So, you will need:1 1/2 cups plain flour
1 cup sugar
1/3 cup oil (I used coconut oil, melted)
1 cup water (I did use milk but obviously this can be substituted for soya milk or alternative, or just plain ol' water)
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 teaspoon vanilla
Grease and line your cake tin and pop the mixture in. Cook at 170 C for around 40mins, testing with a knife which should come out clean when fully cooked. If the top starts to brown too quickly, just cover with some aluminium foil.
I'm going to try this recipe next time without any dairy, gluten (no flour) or sugar! I'll report back and let you know how it turns out!
